Thankful Thursday #9 – Thank YOU!

I’m thankful for YOU today! Yes, YOU, the one reading this post 🙂 Thank you for taking time out of your life to stop by and read about mine!

When I decided to start this blog, I hoped it would be encouraging, informative, and FUN! Whether you’re struggling with Lyme, a new urban homesteader, or just want a recipe, I hope you find something helpful when you visit.

I never realized how thankful I’d be for complete strangers reading my posts! It’s been a wonderful experience to connect with people via comments, or by phone. I seriously wasn’t sure if anyone besides family and friends would read anything I wrote. I had no idea that 6 months after starting this blog, I’d be traveling to Germany for Lyme treatment. Life sure is full of surprises!

Those who I’ve spoken with about my experience at Infusio have been so supportive. I’ve loved talking with each person, learning more about their story, and having them share a little bit of their life with me. Those of you who’ve shared positive words via comments are so awesome too!

Those who’ve shared gardening, or homesteading tips, thank you! Those bloggers out there that I follow and learn from, thank you!

After Infusio – Two Week Update

It’s been a little over two weeks since I returned home from Germany. I’m happy to report I’m still feeling really good! My head is clear, and I still have the same “light” feeling experienced after my first week of treatment. I even wore heels to our friends wedding and did not experience one second of knee pain!!

The first few days after arriving home I was more tired than usual; I attribute that to jet lag. The time difference, and 11 hour flight caused us to be awake almost a full 24 hours, I think that would make anyone tired! Once I got over jet lag, I caught my husband’s cold, and spent my second week resting as much as possible. Continue reading

Turkey Pumpkin Chili

I knew with all the rain headed our way, I’d be craving a warming soup, or stew for dinner last night. I dug this oldie but goodie out of my recipe box.

It had been several years since I made it, and one thing I remembered is that while it had potential, it was also a bit bland. Since then, I’ve gained some experience in the kitchen so I tweaked it to make it more flavorful. I hope you enjoy this unique version of chili!
